Bigos has been a staple in Polish cuisine and culture for centuries, as evidenced by its mentions in literature and culinary texts. The history of Bigos, also known as Polish Hunter’s Stew, can be traced back to the medieval era.
Initially, Bigos was prepared with various types of finely chopped meats, fish, and sometimes even crayfish, enhanced with the addition of lemons, limes, and wine vinegar. From the 18th century onwards, cabbage began to be added, replacing the more expensive ingredients, giving rise to the name “bigos with cabbage.” In the 19th century, the proportions of meat to cabbage changed, leading to the creation of modern Bigos.
Old recipes suggest that Bigos was made with either sauerkraut or fresh cabbage fermented in beet brine. It included ingredients such as bacon, pork loin, sausage, and often roasted game, especially hare, added after cooking. Traditionally, Bigos was served as a warm breakfast, particularly for those embarking on a journey, and in old Polish households, it often began the meal, served before soup and preceded only by a shot of strong liquor.
Bigos improves in flavor with multiple reheatings and does not spoil over long periods. This made it an ideal dish for long journeys, which in olden times often lasted weeks.
During hunting expeditions, the stew, hence called “hunter’s stew,” was reheated in a dough-sealed pot. The loud ‘popping’ of the lid, caused by built-up pressure, signaled its readiness.
Despite being a quintessential Polish dish, the record for the largest serving of Bigos was set not in Poland but in Brazil. On May 5, 2019, the Associação Brasileira dos Criadores de Zebu prepared a record-breaking 4778 kilograms of Bigos, showcasing its global appeal and versatility.
In recognition of its rich history and cultural significance, January 20th is celebrated as World Bigos Day, honoring this timeless and beloved Polish culinary treasure.
